Additional lab notes: This is our first coffee from Kenya and is juicy and mouthwatering. The inherent acidity of Kenyan coffee plays in well with the anaerobic natural processing method, providing orange like acidity. The taste is sweet, with notes of black tea, pomegranate and hint of caramel. The aroma is floral and orange.

About the origin: Ichamama factory membership is primarily very small farms of ~1 acre. Farms are on Mt. Kenya, the second tallest peak in the country.

About the processing method: These beans underwent a 48 hour anaerobic fermentation on raised beds wrapped in plastic to eliminate oxygen exchange after microorganisms consume what is there at the start. After the 48 hours the plastic is removed and the beans undergo a drying process (natural process) lasting as long as 29 days, until they reach the desired moisture content.
