Additional lab notes: This decaf has changed my mind about decaf coffees. It’s truly delicious, but minus the caffeine. with notes of stone fruit, sweet apple and caramelized sugar., it’s the perfect end to the day. I find when I drink decaf at night I wake up more alert than normal.

About the origin: This coffee is a blend from the Guji region in Ethiopia, using coffee from the Dogo Sodu, Goro Bedessa, and Gogogu stations. It is a blend of both natural and washed process coffees, blended by coffee shrub and then sent off for decaffeination.
About the processing method: As mentioned above, this lot was blended by Coffee Shrub, using natural and washed process coffees. Decaffination was performed by Swiss Water in Canada, using their proprietary Swiss Water processing method. In this, the coffee is first cleaned and hydrated placedin a circulation bath with water. But not just any water. The water is loaded with extractables form green coffee and referred to as green coffee extract (GCE). This solution prevents extraction of flavor compounds, while caffeine is removed via diffusion. Over 8-10 hours, 99.9% of the caffeine is removed. Specialized activated carbon continuously removes the caffeine from the CGE water.
