Additional lab notes: This one has instantly been a crowd pleasing cup. Full and rich. Subtle notes of cherry and red grape are present on a backdrop of chocolate. Mouth coating and with a lingering finish, this coffee is a great way to start the day. The heaviness is detectable in the brewed aroma, along with a hint of tobacco.

About the origin: The farm and wet mill, Beneficio El Carmen, are owned by the Alfaro family. Fernando Alfaro is the fourth generation to run the family’s mill. At El Carmen, they have worked very hard at perfecting their controlled anaerobic fermentation. This coffee underwent a 96 hour fermentation with specifically selected microbes and temperature control. After the anaerobic fermentation , the coffee is dried on raised beds for 30 days (natural processing), to ensure slow, even drying. This drawn out process also reduces how much water is needed to process the coffee.
